This variety of pastry uses, as it's basic ingredient, long, finely shredded strands of pastry dough. "Tel Kadayif" as this dough is called is available in Oriental boutiques. Two other forms of this dough are "ekmek kadayif" - shaped like a thick biscuit or "yassi kadayif" which is smaller in size. "Baklava" can only be prepared by an expert pastry chef which is why the recipe is not included in this book. To taste them, we suggest that our readers visit an authentic Turkish "pastahane" or pastry shop! |
