Trifle
Best made in a container about 4 in. deep holding about 4.5 leters.

Note. Topmilk is recommended for flavor, if not available Anchor is ok.
Mix jelly with about ¼ cup less water than required, allow to cool.
Break cake into hunks and put in container, tip in jelly and fruit salad liquid.
Mash into a constant sludge, then mix in fruit salad. And spread out till level.
Place in refrigerator until firm. (jelly sets)
Mix custard powder with about ½ cup milk.
Bring the rest of the milk nearly to the boil then gradually stir in the custard powder mix.
Cook for about 1 minute more and add sugar. (Vary amount depending on taste).
Allow to cool.
Spread custard evenly over base then put back in the refrigerator until cold.
Whip cream then blend in the icing sugar.
Spread evenly over the rest of the trifle. Refrigerate until wanted.

Butter (melted) |
Mix Flower, Sugar and baking powder together. Mix eggs and essence together with 3 Tbsp. of water.
Mix into dry ingredients then beat in butter.
Pour into a greased and floured ring tin.
Bake for 20-30 minutes at 180OC

Heat oil in frypan
Toss leeks a little in the oil
Add mushrooms & stoss or stir a little more.
Cool the mixture,
Add the almonds, breadcrumbs, & cream or milk.
Mix.
Add the eggs one at a time while stirring the mixture.
Put mixture in a greased loaf tin.
Sprinkle some sliced almonds on top.
Bake in an oven for 45 mins at 200.
Serve with green beans, bread or potatoes or with Potatoes in a dish.

Grease an oven proof dish.
Line bottom of dish with sliced potatoes.
Add the sliced leeks,
Then sprinkle the finely chopped spring onions,
Sprinkle the dild over the lot.
Pour the cream or milk into the dish,
Scatter the butter in small clumps over the vegetables.
Put the dish into the oven at 175 for 30mins,
Remove from oven Sprinkle the grated cheese over the vegetables,
Return to the oven for another 10 mins.

Method:
Mix the minced meats, eggs, breadcrumbs, 3 dessertpoons of milk & salt & pepper & stir until well mixed together.
Grease an oven disk well shape the meat mixture into an oblong shape & place in oven dish.
Place the slices of streaky bacon over the top of the "hare", Brown in a hot oven.
Pour the milk over "hare" in the dish Roast for another half hour.
Take the juices from the pan & make a sauce with it & if you have add a spoonfull of red or black currant jelly or jam.
NOTE : The oven should be pre heated to 180c before putting "hare" into oven.
