2 serving olive
oil cooking spray (5 one-second sprays per serving)
2 medium carrot(s)
1 medium red onion(s)
1 large yellow summer squash
1 large zucchini
1 medium sweet red pepper(s)
1 large portobello mushroom(s)
1/2 cup vegetable
broth
4 oz fat-free cream cheese
1/4 tsp kosher
salt
1/2 tsp black pepper
1 tsp Mrs. Dash Garlic and Herb
Prepare all vegetables by slicing them into thin strips about the size
of a fettuccine noodle. Spray dutch oven with cooking spray and heat
over medium high heat.
Add carrots and cook 5 minutes. Add onions and continue to cook 5 more
minutes. Add zucchini, yellow squash and red pepper. Stir often.
Continue to cook 10 minutes until tender. Add mushrooms and gently toss
so as not to break them. Cook 5 minutes more.
Place broth, cream cheese cut into chunks and seasonings into microwave
safe dish. Microwave on high for a minute. Whisk. Microwave another
minute or so until the cream cheese is melted. Pour into the vegetable
mixture and continue to cook for another 5 minutes while
stirring.
Add
4 ounces of dried whole wheat pasta, cooked. (2 oz = 3 points) The
result will be a HUGE bowl of veggies and pasta. You will be amazed at
how great this tastes.
