Green Beans Parmesan

Servings | 2  The serving size is somewhat large, but these are so good you will want to eat the whole pan of them!

2 pounds green beans
2 serving olive oil cooking spray (5 one-second sprays per serving)
2 medium shallot(s)
1/2 tsp kosher salt
1/2 tsp black pepper
1/4 cup shredded Parmesan cheese
 
Trim green beans and cook in boiling water for 10-12 minutes until tender. Drain.

Heat large skillet over medium high heat and spray with olive oil cooking spray. Add shallots and saute about 10 minutes until tender and just starting to brown. Add green beans and toss. Continue to cook about 10 minutes, stirring constantly, until green beans start to brown a little too.

Season with salt and pepper. Remove from heat and add parmesan cheese. Toss to distribute and let cheese melt. Serve immediately.
