Comments: For
both the young and the old, the bird's nest provides proteins, vitamins
and various minerals, all very essential to life. Every drop of the
little bird's saliva is a blessing contributing towards healthy living.
For devotees, it's a divine "Caviar of the East," a delicacy so extravagantly
priced that some people will travel a long way to pay through their nose
to have it.
For critics, it's an exotic dish mythologized by status seeking folks for
its aphrodisiac and medicinal qualities allegedly hidden inside the soft
jelly.
Preparations: There
is one General Preparation for all Recipes of various exotic Bird's Nest
Soup or rejuvenating Bird's Nest Drink.
Step 1.
Soak the required pieces of Bird's Nest in hot water for 1 hour to soften
it. Rinse with plain water twice. Drain well.
Step 2
Double boil in clean water with pandan leaves for one and a half hours.
Add rock sugar to taste.
VARIOUS RECIPES
Bird's Nest with Korean Ginseng:
Step 1. Soak
the required pieces of Bird's Nest in hot water for 1 hour to soften it.
Rinse with plain water twice. Drain well.
Step 2 Stew
Bird's Nest and Korean Ginseng in a crock-pot or double-boiler. Add
rock sugar to taste.
Bird's Nest with Chicken and Ginseng:
Step 1. Soak
the required pieces of Bird's Nest in hot water for 1 hour to soften it.
Rinse with plain water twice. Drain well.
Step 2
Put Bird's Nest and Ginseng into chicken meat. Stew for 1-2 hours.
Cold Bird's Nest:
Step 1. Soak
the required pieces of Bird's Nest in hot water for 1 hour to soften it.
Rinse with plain water twice. Drain well.
Step 2 Bird's
Nest is cooked, let it cool for a while before putting it into the refrigerator.
Serve when chilled.
Special
and Exotic - Bird's Nest in coconut milk with
quail's eggs
Ingredients :
-
1 tahil (38gms) bird's Nest
-
3 cups of boiled water
-
113 gms rock sugar
-
1 cup fresh coconut milk
-
6 Quail's (bird's) eggs
Cooking procedure:
-
Before the cooking, soak the bird's nest in some
warm water for 2 hours; pick up any dirt (feathers, sand etc) and drain
water.

Dissolve the 113 gms rock sugar in the 3 cups
of waer.
-
Hard boil the quail's eggs and peel off the shells.
-
Cover and double cook the bird's nest with the
rock sugar for 2 1/2 hours.

Add the coconut milk and double cook for a further
15 mins.

Add the quail's eggs and allow to cool.
-
Serve chilled if so desired. (Enough for
2-3 person.)
