Tiramisu'

(Recipe for 6-8 people)

Ingredients:

400 grams / 14 oz  ........  Ladyfingers
4  ..................................  Eggs
400 grams / 14 oz  ........  Mascarpone cheese
4 table-spoons  .............  Sugar
1 and 1/2 cup  ...............  Strong coffee
1 tea-spoon  ..................  cocoa

Preparation:

Mix all sugar and egg yolks together. Add Mascarpone cheese.
Whip whites and add to the mixture. Mix slowly.
Moisten the Ladyfingers on both sides by immersing them in the coffee.
You can sweeten the coffee with a tablespoon of sugar or dilute it with two spoons of milk (or with any kind of syrup or liquor that you like).
Place a layer of moistened Ladyfingers on a plate, cover them with half the mixture.
Create another layer of moistened Ladyfingers and cover with the remaining mixture.
Store in the refrigerator for a couple of hours before serving.
Just before serving, sprinkle with the cocoa powder.

Note: you can also substitute two eggs with whipped cream (half pint of heavy duty cream). This will make your Tiramisu' lighter.

Savoiardi

( Recipe for 40 Ladyfingers )

Ingredients:

75 grams / 3 oz  ........  Flour
3  ...............................  Eggs
75 grams / 3 oz  ........  Sugar
A pinch  .....................  Salt

Preparation:

Mix all sugar and egg yolks together.
Add flour little by little. Whip whites and add to the mixture.
Add salt and a chemical leavening.
Shape in the form of Ladyfingers (or place all the batter in 2 round baking pans if you want to make a single-base, two layer tiramisu').
Bake at 350((until golden brown for the cookies or for 25 min. for the cake).
