Pasta with vegetables



Ingredients for 4 people:

Any kind of short pasta, about 16 oz.

About four table spoons of olive oil

One medium carrot

One zucchini

One cup of peas

Salt

Pepper

Parsley

Garlic (fresh or dry)

Preparation:

Wash and slice in small rings the carrot and the zucchini.

Cook peas, the sliced zucchini and carrots together with pasta in salted boiling water.

Once cooked, put pasta and vegetables in a big bowl and add salt, pepper, parsley and garlic as you like.

Serve hot (with parmigiano cheese on top, if you like).

This is a fast, light dish, good for a vegetarian meal and for a low calorie diet.

If you don't have all the ingredients or if you like variations, you can substitute the vegetables with spinach, potatoes, broccoli, for a different taste.
