My Mom's Chocolate Pie

1 1/2 teaspoons flour
1 cup sugar
3 egg yolks, beaten
1 1/2 teaspoons chocolate (powdered)
1 1/2 cups milk
1/2 teaspoon vanilla
1 baked pie shell
Mix the sugar, flour, and chocolate together, add the egg yolks, then the milk and the vanilla. Cook over medium heat until thickened, then pour into a baked pie shell. Beat the egg whites with 3 or 4 tablespoons of sugar until stiff. Cover the pie with the meringue and bake at 350 degrees until brown

Brownie Bottom Pudding Pie

4 squares semi-sweet or german baking chocolate
1/4 cup margarine
3/4 cup sugar
2 eggs
1 teaspoon vanilla
1/2 cup flour
1/2 cup chopped nuts
2 1/2 cups cold milk
2 packages chocolate instant pudding
1 container Cool Whip
Heat oven to 350 degrees. Grease bottom and sides of 9" pie plate. Microwave chocolate and butter in large bowl on high 2 minutes. Stir until chocolate is melted. Stir in sugar, eggs and vanilla. Mix in flour and nuts. Spread in pan. Bake 25-30 minutes. Cool completely. Pour milk into large bowl. Add pudding mixes. Beat with wire whisk 2 minutes. Let stand 2 minutes. Spread over brownie. Top with Cool Whip. Garnish with grated chocolate. Refrigerate

Simple Apple Pie

9" double pie crust
3/4 cup of sugar
1 teaspoon cinnamon
6 medium apples
2 tablespoons flour
1/2 teaspoon nutmeg
Butter or margarine
In a large bowl combine sugar, flour, cinnamon, & nutmeg. Peel and slice apples then add them to mixture being sure to coat all the slices. Put into pie shell. Sprinkle left-over mixture on top. Cover with top pie crust. Cut slits in top of pie. Brush with melted butter or margarine. Bake at 425 degrees for 30 minutes.

Double 9" Pie Crust

2 cups sifted flour
1 teaspoon salt
3/4 cup shortening
1/4 cup water
Sift flour before measuring; spoon lightly into measure cup and level without shaking or packing down. Combine flour with salt. Using pastry blender or knife cut in shortening until uniform; mixture should be fairly coarse. Sprinkle with water (a tablespoon at a time) toss with a fork. Work dough into 2 parts and press into flat circles. Lightly flour pastry cloth and roll each into circles.
