Our church has an outdoor sign which often displays catchy phrases, designed to make the traveller smile, and take note of our services. Last week's sign said: "Try one of our Sundays". For some reason, I keep thinking there should be an 'apostrophe' somewhere in that word "Sundays". Would you be so kind to clear this question up for me? Please give me the reasoning behind the rule...and if you can, figure out where I got the idea that it might require an "apostrophe." Thank you in advance.

There should not be an apostrophe with "Sunday" in your sentence. An apostrophe signals a possessive, and "Sunday" in that sentence does not possess anything.
Here is a sentence where "Sunday" does require an apostrophe:
I really enjoyed last Sunday's service.
In that sentence, the service belongs to "Sunday.
