Here are a few of our favorite recipes.  Each recipe makes one gallon of wine, but by the  time it is finished you will have about three quarters of a gallon.  We recommend that you start out with a larger amount such as 3 or 5 gallons.  It is pretty depressing when you wait so long for the wine to finish and are able to drink it all in one sitting.  And it is always nice when you have enough to store some away to age properly.  We'll start off with something simple.

 

 

Concord

1 gal. Pure Juice (Welch's or equal)

1/4 lb. Sugar

1 tsp. Pectic Enzyme

1 tsp. Nutrient

1 Campden Crush

1 pkg. Wine Yeast

    Mix the grape juice with the sugar and other ingredients excluding the wine yeast.  Allow the mixture to set for 24 hours. (This is important because the Campden tablets are killing the natural yeast in the juice.)  After the 24 hour waiting period add the Wine yeast.  You will need to activate the yeast according to the package instruction.  Place air-lock on top of carboy and wait approx. 24 hours.  Within this time you should see the fermentation taking place.  There will be numerous bubbles in the juice itself and the air-lock will be bubbling. If this does not occur do not fear because your yeast may not have been any good.  It can always be salvaged.  See our wine making tips page.  After the bubbles slow down in your air-lock it is time to siphon the wine into another carboy.  The wine may still be fermenting but this helps with the clarification.  Allow it to sit for another month and the repeat the siphoning process again.  After about a month your wine should be ready for bottling.

    Check to be sure the bubbles have stopped and the you will add 1/2 tsp. stabilizer to the wine.  You can sweeten to taste if desired and then bottle.   

    This is a very simple recipe for starters and it is very delicious.  It continues to be one of our favorites.

 

Blueberry

2 lb Blueberries

7 pts. water

1 3/4 lb Sugar

1 1/2 tsp. Acid Blend

1/2 tsp. Pectic Enzyme

1/2 tsp. Energizer

1 Campden Crush

1 pkg Wine Yeast
