What is pH?
Technically it is the measurement of the hydrogen ion concentration of a given sample of water. From this measurement it can be determined whether the water is acid, neutral or alkaline. The scale extends from 0 to 14. A pH between 0 and 7 is termed acid, and a pH between 7 and 14 is termed alkaline or basic.
Why pH changes;
pH is not a constant factor and is subject to continual change due to influences like bacterial assimilation causing acidity or calcium and magnesium compounds like shells or coral that cause alkininity.

TO REDUCE ACIDITY: Add sodium bicarbonate.
TO REDUCE ALKALINITY: Add sodium biphosphate.
(NOTE: Adjust pH slowly. Reduce at a rate not exceeding half a teaspoon per 50 litres (20 gallons) of water.)

H2O or WATER dissociates into hydrogen (H+) ions, which make a solution acidic and hydroxyl (OH-) ions which make it alkaline (or basic).
DEFINITION OF ACID: Acids are salts of hydrogen, as belonging to a class of substances which always contain hydrogen. As some salts exhibit acid properties, it is necessary to add that the substances must contain no basic elements or group of elements...
...Some acids on treatment with the hydroxide of an alkali metal exchange all their hydrogen for metal, thus producing a normal salt, while other acids produce acid salts in addition.
DEFINITION OF ALKALI: Word used to denote the hydroxides of lithium, sodium, and potassium, the oxides of these three elements and of calcium, strontium, and barium, and also ammonium carbonate and the carbonates of lithium, sodium and potassium.
