LUIGI'S CHICKEN PILAF
According to Uncle Keith, this is a Greek dish. Well, duh. Doesn't the Luigi make that obvious?
INGREDIENTS
2 - 4 lbs chicken thighs
6 - 8 cloves of garlic, chopped, or garlic powder
1 small can tomato paste
salt and pepper to taste
1/3 cup butter
2 1/2 cups boiling water
1 tsp salt
1 small can of peas
1 cup raw rice
DIRECTIONS
Clean chicken and remove skin if desired. Rub chicken pieces with garlic or sprinkle with garlic powder.
Place chicken pieces in an oiled baking dish or casserole and coat chicken with tomato paste. Sprinkle with salt and pepper, and dot with butter. Add 1/2 cup of the boiling water and bake in a 350 degree oven for 30 minutes, turning chicken pieces once.
Remove chicken and add remaining boiling water to baking dish along with rice, peas, and salt. Stir carefully to make sure that all the rice sinks to the bottom of the casserole, and replace the chicken pieces on the top.
Increase oven heat to 400 degrees, and continue baking for 30 minutes, or until rice is tender. Serve with French bread and some wine.
