What you need: How to do
2-3 lb of veal joint
water
salt
saltpetre Put the joint in the oven
for ten - eleven hours.
temperature 75C - 165F

Mix water, salt and saltpetre.
Place the joint in bowl,
cover completly with the mix.
Let it rest in the frig for 4-5 hours.

Serve thin slices with a salad.
