Rags'n'Tatters




I first read this in a book on Scottish recipes; and I have made it a couple of time at my parents' request.   Rags'n'tatters are just the sort of thing served as a sweet'n'savoury at parties—but I don't throw parties myself, although my parents did, at least now and then.
        Of course, fusspot that I am, I don't actually care for them myself.   Rags'n'tatters, I mean—though parties, too, for that matter, which is why I don't throw them.   However, everyone else seemed to enjoy the recipe a lot.




Ingredients


3 oz flour
pinch salt
dash cayenne pepper
2 oz butter
1 oz grated Cheddar cheese
1 oz grated Parmesan cheese
1 egg
1 bottle or jar of mango chutney





Directions


Making the Dough

  Put the flour, salt, and cayenne pepper in a large mixing bowl.

  Rub in the butter

  Stir in the grated cheese.

  In a separate bowl, lightly beat the egg.

  Add just sufficient egg to the dry ingredients in order to bind them into a stiff dry pastry, suitable for rolling out.

Rolling out the Pastry
Gather the pastry into a ball.   Put it on a clean, dry surface (such as a kitchen counter) that has been sprinkled with flour.   Using a rolling pin, roll it out to about an eighth of an inch thick.

Making the Sandwich
Brush beaten egg over the surface of the pastry.   Then spread one half of the pastry thinly with mango chutney.   Fold the other half of the pastry over the top, and press down lightly to seal the two halves together.

Cutting the Rags and Tatters
With a sharp knife, cut the assembled pastry-and-chutney sandwich into odd shapes.   Grease and flour a baking sheet; and put the shapes on it, a little apart from one another.

Baking
Bake at 475°F until golden brown.   Remove from the oven, and serve hot.

Makes about a dozen pieces, depending on how they are cut.
