Interesting Facts About Strawberries:

The strawberry, as we know it, was originally grown in northern Europe, but species
are also found in Russia, Chile, and the United States. The berries seem to be strewn among  
the leaves of the plant. The plant first had the name strawberry,  which later was changed
to strawberry.
The strawberry plant has seeds on the outside skin rather than having an outer skin
around the seed, as most berries do. There are about 200 seeds in one strawberry.
Strawberries are high in vitamins and low in calories. Compared to a lot of other fruits,
the strawberry is tiny but mighty. It is packed with nutrition and flavor. One serving of
strawberries - that's 8 medium berries -  has 160% of the Vitamin C our bodies need every
day. Strawberries also contain 20% of the folic acid and 16% of the dietary fiber we need
every day for good health. And, only 45 calories and no fat!

STRAWBERRY MOLD

Ingredients:
6 ozs. strawberry jello
10 ozs. frozen strawberries
8 ozs. can crushed pineapple
8 ozs. sour cream

Directions:
Dissolve jello in 1-1/2 cups boiling water.
Add thawed strawberries and crushed
pineapple. Mix well. Grease 6 cups mold
with mayonnaise. Add 1/2 of jello mixture.
Chill. Leave rest of jello out. When chilled,
spread sour cream. Spoon rest of jello on top.
Chill.

STRAWBERRY CAKE
"A beautiful cake for the strawberry lover."

Ingredients:
1 (3 ounce) package strawberry gelatin
1/2 cup cold water
1 (18.25 ounce) box white cake mix
4 eggs
1 cup vegetable oil
3 tablespoons all-purpose flour
1 (10 ounce) package frozen strawberries, thawed
6 tablespoons butter or margarine
2 cups confectioners sugar
Directions:
Dissolve the gelatin in cold water. Combine with
the cake mix, eggs, vegetable oil, flour and 1/2
of the strawberries in a mixing bowl. Beat for 5
minutes. Pour into 3 greased and floured round
cake pans. Bake at 325 degrees F (165 degrees C)
for 30 to 35 minutes or until the layers test
done. Cool in pans on wire racks.
To Make Frosting:
Cream the butter, sugar and 1/2 of the
strawberries in a mixing bowl until light
and fluffy, adding additional confectioners
sugar if needed for, desired consistency.
Spread the frosting between layers and over
the top and sides of cake. Fresh strawberries
may be substituted for the frozen strawberries.
Makes 1 - 9in. cake.
