CHEESE PUDDING
A special favorite from Mary Swift

Serves about 6

5 slices buttered bread
1/2 lb. sharp cheese
3 eggs
1 tsp. dry mustard
1 tsp. salt
1/4 tsp. pepper
2 cups milk

Cut bread into cubes and place in buttered cassarole, 2 qt. size.  Sliver cheese and add to bread.  Beat eggs, add seasoning and milk.  Mix all ingredients and refrigerate overnight or for at least 8 hours.  Bake in 350 degree oven, set in a shallow pan of water, for 1 hour, until puffy and golden brown.
This can be an entree in itself or a substitute for potatoes.  There are many versions in almost every cook book under various titles, such as Cheese Strata.
