POPOVERS
Makes 6-9

44 large eggs, beaten lightly
1 1/3 cups milk
5 Tbsp unsalted butter, melted
1 1/3 cups all-purpose flour
1/4 tsp. salt

In a bowl, beat together eggs, milk and butter until combined well.  Add the flour and salt and beat until just combined - batter will be a bit lumpy.  Divide the batter among 9 well buttered 1/2 cup muffin tins or 6 popover (2/3 cup) tins and bake in the middle of a preheated 375 degree oven for 1 hour.  Cut a slit in the top of each popover with a small sharp knife and bake for 10 minutes more.  Serve with jam.
