Cheesy Chili Squares

Makes:  24-36 squares (depending on size of squares)

4 T. butter
5 lg. eggs
1/4 c. all-purpose flour
1/2 t. baking powder
1/8 t. salt
1/2 t. cayenne pepper
2 to 2-1/2 c. shredded Monterey Jack or Cheddar cheese
  (or you can mix the cheeses together for a blend)
1 c. small-curd cottage cheese
12 oz. jar of sliced jalapenos, drained
  (use 1/2 to 2/3 of jar, depending on your taste preferences)

Preheat oven to 400 degrees Fahrenheit.  Melt butter in a 9-inch
square baking pan in oven.

In Cuisinart bowl, add eggs, flour, baking powder, salt, cayenne,
cheese, cottage cheese, and jalapenos.

Tip baking pan to coat bottom and sides; add melted butter to
ingredients in Cuisinart bowl.  Set pan aside to cool slightly.

Blend ingredients in Cuisinart for about 10-15 seconds, until
mixture is blended thoroughly resembles a thick cake batter.

Pour mixture into buttered pan and bake 15 minutes.  Reduce oven
temperature to 350 degrees Fahrenheit, and bake 30-35 minutes
longer, or until tester inserted into center comes out clean.
DO NOT OVERBAKE.

Let cool on rack 15-20 minutes.  Cut into 1 or 1-1/2" squares.
Serve warm or at room temperature.

NOTE: if made in advance, cover and refrigerate up to 2 days.
Freeze for longer storage.
