Reduced Fat Cinnamon Crunch Walnut Loaf

Preheat oven to 350 degrees Fahrenheit.  Grease a 
9x5 loaf pan, or use a nonstick loaf pan.

Combine and set aside:
1-3/4 c. coarsely chopped walnuts
1/4 c. sugar
1 T. cinnamon

In separate mixing bowl, combine:
3/4 c. sugar
3 c. all-purpose flour
4-1/2 t. baking powder
1/2 t. salt

Blend in:
1/4 c. unsweetened applesauce
1 egg
1-1/4 c. skim milk

Stir just until dry ingredients are moistened.  Fold in 
walnut mixture.  Spoon into loaf pan; bake for 65-70 mins.
or until cake tests done.

Cool in pan at least 10 minutes; remove from pan and finish
cooling on wire rack.

Makes:  1 loaf
