Reduced Fat Orange Walnut Bread

Preheat oven to 350 degrees Fahrenheit. Grease a
9x5 loaf pan, or use a nonstick loaf pan.
Combine and mix well:
2/3 c. brown sugar
2 c. all-purpose flour
2-1/2 t. baking powder
1/2 t. salt
1 T. grated orange peel
In separate mixing bowl, combine:
1 egg
1 c. orange juice
3 T. unsweetened applesauce
1 T. vanilla
Add liquid mixture to dry ingredients; stir just until dry
ingredients are moistened. Fold in 1-1/4 c. chopped walnuts.
Spoon into loaf pan; sprinkle top with 1/3 c. chopped walnuts.
Bake for 60-65 mins. or until cake tests done.
Cool in pan at least 10 minutes; remove from pan and finish
cooling on wire rack.
Makes: 1 loaf
VARIATIONS:
For chocolate bread, add 2-3 ounces of unsweetened chocolate,
melted.
