Sweet Lemon Bread

1-1/2 c. all-purpose flour
1-1/4 t. baking powder
1/2 t. salt
1/2 c. butter, room temperature
1 c. granulated sugar
2 eggs
1/2 c. skim milk
2 t. lemon flavoring
1 t. grated lemon rind
Preheat oven to 300 degrees Fahrenheit. Grease 9x5x3"
loaf pan.
Blend flour, baking powder, and salt together in mixing
bowl. Set aside.
In separate mixing bowl, cream butter and sugar. Beat in
eggs, flavoring, and lemon rind. Add dry ingredients to
butter mixture, 1/2 cup at a time, alternately with milk.
Mix well.
Pour batter into prepared loaf pan and bake for 70-75
minutes, or until cake tests done. Cool for 15 minutes,
then remove to cooling rack.
Drizzle glaze (recipe below) over bread. Slice thinly and
serve.
Glaze

1 T. lemon juice
1/2 c. powdered sugar (approx.)
Mix together until sugar is dissolved and glaze is smooth
and proper consistency (you may have to adjust amounts of
ingredients to get proper consistency).
