Microwave Peanut Brittle

1/2 c. light corn syrup
1 c. granulated sugar
1 c. dry-roasted peanuts
1/2 t. salt
1 t. butter or margarine
1 t. vanilla
1-1/2 t. baking soda
Oil a large baking sheet; set aside.
In a 2-quart microproof dish, combine corn syrup and sugar. Microwave on
HIGH 4 minutes. Stir in peanuts. Microwave on HIGH 3-5 minutes, until
light golden brown. Stir in salt, butter, and vanilla. Microwave on HIGH
1-2 minutes. Stir in baking soda until mixture foams. Quickly pour onto
oiled baking sheet.
Let mixture cool and break into pieces. Store in airtight container.
Yield: approximately 3 cups of candy.
