Chinese Chews
Crust:
1/2 c. butter or margarine
2 T. granulated sugar
1 c. all-purpose flour
Topping:
2 eggs
1/4 c. coconut
3/4 c. chopped nuts
1-1/2 c. brown sugar, firmly packed
2 T. all-purpose flour
1 t. vanilla
Preheat oven to 350 degrees Fahrenheit.
Mix together the butter, sugar, and 1 cup of flour. Press into bottom
of 9x9-inch ungreased pan. Bake for 15 minutes.
Mix eggs, coconut, nuts, brown sugar, flour, and vanilla into bowl.
Pour over baked crust; bake an additional 25 minutes. Cool and cut into
bars.
Yield: 16 bars

3/4 cup unbleached flour
1 tsp baking powder
1 cup sugar
1/4 tsp salt
2 eggs
1 8-oz. package dates, chopped
1 cup chopped walnuts
Preheat oven to 325 degrees. Combine flour, baking powder, sugar and
salt. Beat eggs, then fold into the dry ingredients. Blend in dates
and nuts. Drop by spoonfuls onto greased cookie sheets. Bake for 20
minutes and remove from sheet to cool. Makes 2 dozen cookies.
