Chewy Brownie Cookies

1/3 c. butter-flavor shortening
3/4 c. firmly packed brown sugar
1-1/2 t. vanilla
1 large egg
3/4 c. all-purpose flour
1/6 c. unsweetened baking cocoa (approximate - does not have to
  be an exact measurement)
1/8 to 1/4 t. baking soda
1/4 t. salt
1 c. semi-sweet chocolate chips

Preheat oven to 375 degrees Fahrenheit (325 if using convection).

In large bowl of food processor, combine shortening, brown sugar,
and vanilla.  Process until well-blended and creamy.  Add egg; pulse
until combined into creamed mixture.

In separate bowl, combine flour, cocoa, baking soda, and salt; mix
well.  Add to creamed mixture in food processor bowl.  Process until
combined.  Add chocolate chips; pulse 4-5 times until distributed
throughout dough.

Drop by teaspoonfuls onto ungreased cookie sheets, about 1-1/2" apart.
Bake about 7-9 minutes, or until cookies are set.  DO NOT OVERBAKE.
Remove from oven; cool on baking sheet 2 minutes.  Remove from baking
sheet to wire rack until thoroughly cooled.

Store in airtight container.

Makes about 2 dozen.

NOTE:  this recipe can be doubled easily.
