Raspberry-Chocolate Streusel Squares
------------------------------------

Makes: 18 bars

1-1/2 c. all-purpose flour
1-1/2 c. quick oats, uncooked
1/2 c. granulated sugar
1/2 c. brown sugar, packed
1 t. baking powder
1 c. butter, softened
3/4 c. raspberry (or strawberry) preserves (I use All-Fruit
  preserves for this purpose)
2 c. semi-sweet chocolate morsels
1/4 c. chopped pecans

Preheat oven to 375 degrees Fahrenheit.

Blend together flour, oats, sugars, and baking powder. Using
pastry blender or two knives, cut in butter. Reserve about
3/4 cup of mixture for topping and set aside in small bowl.
Press remaining oat mixture into greased 9" square baking pan.
NOTE: I prefer to use a nonstick baking pan.

Spread preserves over crust. NOTE: I find it easier to spread
the preserves if they are slightly warmed.

Sprinkle with chocolate morsels. Combine reserved oat mixture
and nuts; sprinkle over morsels. Pat down lightly.

Bake for 30-35 minutes, or until light golden brown. Cool
completely in pan, about 1-1/2 hours. Cut into about 18
bars.

VARIATIONS:
These bars are also good if the chocolate morsels are omitted.
