Fettucine with Hot Tomato and Bacon Sauce
1/2 pound bacon slices
3 Tablespoons olive oil
2 1/2 onions, chopped
3 garlic cloves, crushed
5 large tomatoes-peeled, seeded, and chopped
1 Tablespoon dried tarragon
1/4 teaspoon red pepper flakes
salt and pepper
4 Tablespoons parsley, chopped
1 pound fettucine
Parmesan Cheese
Fry the bacon until crisp and drain on paper towels. Pour out excess fat from pan, except 1 tablespoon
and add the olive oil to the pan. Add onions and saute about 5 minutes, then add garlic and tomatoes.
Simmer for a few minutes and then add the tarragon, red pepper flakes, salt and pepper. Simmer for another
half hour, stirring occasionally. Add parsley and simmer for 5 minutes. Crumble bacon and stir into sauce.
Pour sauce over pasta and mix. Top with Parmesan cheese.
HINT: For a thicker sauce, add a small can of tomato paste at the same time the tomatoes are added.
