Oatmeal Raisin Ranchero Cookies


In one bowl mix dry ingredients:
1 teaspoon baking soda
2 cups sifted all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder

In another bowl mix:
1 cup softened shortening
1 1/4 cup brown sugar
3/4 cup granulated sugar

Then add in:
2 eggs
1 teaspoon vanilla

Then gradually add the dry ingredients to this mixture until well blended.
Stir in 2 cups of Quick Oats and Raisins.
Drop by teaspoonfuls onto ungreased cookie sheet and bake at 375 degrees for 8-10 minutes or until lightly browned.
