Peanut Butter Roundup Cookies

1 cup shortening
1 cup brown sugar, packed
3/4 cup sugar
2 eggs
1 cup creamy peanut butter
2 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1 cup Quaker Oats (quick or old-fashioned)
Beat shortening and sugar together until creamy. Add eggs & peanut butter,
beat well. Sift together flour, soda & salt. Add to creamed mixture,
mixing well. Stir in oats. Shape dough to form 1 inch balls. Place on
ungreased cookie sheet, with tines of fork make crisscross pattern on
cookies. Bake at 350 for 8-10 minutes. Makes 6 dozen.

Ranger Cookies

1 cup sugar
1 cup brown sugar, packed
1 cup shortening
3 eggs -- beaten
1/2 teaspoon salt
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 cup coconut
2 cups oats
2 cups cornflakes
Cream shortening, add sugar gradually. Cream together until light and
fluffy. Add beaten eggs, and gradually add dry ingredients which have
been sifted together 3 times. Fold in coconut, oats and cornflakes.
Drop from teaspoon on greased cookie sheet. Bake at 325 about 12 minutes.
