The following two recipes were contributed by Rhona Epstein, daughter of Uncle Harry.
When I made these cukes, my father (Uncle Harry) tasted them and said that he remembered this dish from his childhood (Rhona)
![]() | 2 kilo sliced cukes |
![]() | sliced onion |
![]() | 1/4 cup salt |
Put the above in a large collander for a couple of hours or overnight.
Put into a pot, and add:
![]() | 2 cups sugar |
![]() | 3 cups vinegar |
![]() | 2 Tbls. mustard seed (or pickling spices) |
![]() | 2 Tbls. celery seed (or grnd. celery seed) |
![]() | 1 Tbls. tumeric |
Bring to boil, covered, then turn flame off. Put into glass jar (will stain plastic) and store in fridge. Will stay in fridge for months.
This recipe came from my mom (Aunt Faye). She said that she got the recipe from her mother-in-law, Sadie. My mom served it every Shabat morning (Rhona).
