Crawfish Casserole
1 lb. crawfish tails         1 1/2 c. rice (raw) 1 small can cream         1 c. oil
2 eggs                          1 c. parsley
chopped celery             salt to taste
2 cans cream of mushroom soup
1 c. cheese (4 slices)   
1 bell pepper chopped
red and black pepper
Mix all together and pour into 9x13 Pyrex dish.  Cover with foil and bake at 350 for 45 minutes to 1 hour.
Green Bean Casserole\
2 14.5 oz. cans green beans
1 can cream of mushroom soup
1/2 t. salt
3 T. margarine
1 can french fried onions
Combine green beans, soup, salt, and margarine in a medium casserole dish.  Stir gently.  Top with fried onions.  Bake at 350 for 20 minutes or until onions are dark golden brown.
           Enchilada  Casserole
              
1lb. ground beef
1 small onion chopped
1 green pepper, chopped
garlic powder
1 can enchilada sauce
2 small cans tomato sauce
9 corn tortillas
1 large can refried beans
2 cans pitted black olives
3 cups shredded cheese
Brown ground beef, drain. Brown
onions,green peppers, and garlic
powder with meat. Add enchilada
sauce and tomato sauce to meat
mixture. Simmer for a few minutes.
In a large pan,uncovered,layer
tortillas, beans, olives,meat and
cheese. Bake at 350 for 30 minutes.

                     
               Tuna Casserole
1 small can tuna, drained
1 cup cooked noodles
1-1/2 cup cheese
1/2 can cream of mushroom soup
Flake tuna in medium casserole
bowl : add cooked noodles. Grate cheese, stir, add mushroom soup
and heat at 350 for 20 to 25
minutes. Makes 4 sevings.
                         Pork Noodle Casserole
2 cups uncooked egg noodles
2 pounds boneless pork, cut into 3/4 inch cubes
2 medium onions chopped
2 cans (15-1/4 ounces each) whole kernel corn,drained
2 cans(10-3/4 ounces each)condensed cream of mushroom soup undiluted
1/2 teaspoon salt
1/2 teaspoon pepper
cook noodles according to package directions.
In a large skillet, cook pork, and onions over medium heat until meat is no longer pink. Drain noodels. Stir
noodles, corn, soup,salt and pepper into pork
mixture. Transfer to a greased 3-qt. baking dish.
cover and bake at 350 foer 30 minutes. Uncover;
bake 15 minutes longer. May substitute chicken
breast or beef.

                       
               Corn bread casserole
1 can (15-1/4 ounces) whole kernel
corn, drained
1 can(14-3/4 ounces cream style corn
1 package(8-1/2 ounces)corn bread/
muffin mix.
1 egg
2tablespoons butter or margarine,
melted
1/4 teaspoon garlic powder
1/4 teaspoon paprika
In a large bowl,combine all ingredients.
Pour into a greased 11by 13 by 2in.
baking dish. Bake uncovered, at 400
for 25-30minutes or until the top and
edges are golden brown.
