Fruity Spice Bars

      Ingredients
      1/2c. & 1T all-purpose flour
      3/4t. apple pie spice
      1/2t. baking soda
      1/4t. baking powder
      3/4oz. instant rolled oats
      1/4c. & 2t. firmly packed dark brown sugar
      2T & 2t. margarine
      2 eggs
      1 1/2oz. mixed dried fruit, diced
      1/4c. dark raisins
      1t. confectioners' sugar

      To Prepare:
      Preheat oven to 350 degrees. In small mixing bowl sift flour, apple pie spice, baking soda, and baking powder. Add oats, stirring to combine; set aside. In medium mixing bowl cream together brown sugar and margarine until thoroughly combined. Add eggs, one at a time, beating until smooth. Gradually beat in sifted ingredients. Fold dried fruit and raisins into batter. Spray an 8x8x2" baking dish with nonstick cooking spray. Transfer batter to prepared baking dish. Bake for 30 minutes (until a toothpick, inserted in center, comes out dry). Transfer cake to wire rack and let cool. Dust top of cake with confectioners' sugar. Cut into bars.
