Hopping John


      Ingredients
      6 slices bacon, crisped and crumbled
      3T bacon drippings
      1/4lb. smoked ham, coarsely chopped
      1/2c. chopped onion
      1 garlic clove, minced
      1-15oz. can Blackeye Peas, drained
      2c. cooked rice
      1/8 to 1/4 t. hot pepper sauce
      pinch of crushed red pepper
      salt to taste

      To Prepare:
      Saute ham, onion and garlic in bacon drippings until onion is tender. Stir in peas, rice, hot pepper sauce, pepper, and bacon; simmer until thoroughly heated. Salt to taste.
