Turn oven on to 375 degrees F or 190 degrees C to preheat. Grease 12 non stick muffin cups with shortening.
In bowl and using whisk or spoon, stir together flour, sugar, baking powder and cinnamon; set aside. In small saucepan, heat butter over low heat just until melted; set aside.
Into large bowl, break egg. Whisk in melted butter and applesauce, With wooden spoon, stir in flour mixture, apple, and raisins or choclate chips (if using) just until the last of the flour disappears, scoop out batter and drop into prepared muffin cups.
Topping: in small bowl, mix sugar and cinnamon; sprinkle over batter. Bake at 375 F or (190 C) oven for 25 minutes or just until tops are firm to touch and cake tester or toothpick inserted in center comes out clean. Remove from pans and let cool on rack. Makes 12 muffins.
