Cornbread

1C corn meal
1C flour
1/4C sugar
3t baking powder
1t salt
1 egg
1C+ milk

Mix all dry ingredients in bowl until well-blended. Add egg and 1 cup millk. Mix well. Add more milk until mixture has a "soupy" consistency. Pour into greased baking pan or pie pan and bake at 425 degrees for 30 minutes.




Parmesan Puff

2/3C water
1/3 milk
4T butter
3/4t salt
1/4t nutmeg
dash pepper
1C flour
4 eggs
1C parmesan cheese, grated

Preheat oven to 375 degrees. In large saucepan combine water, milk, butter, salt, nutmeg, and pepper. Bring to boil over medium-high heat. Remove from heat; add all of the flour and beat for 1 minute. Return to heat and beat for 2 minutes. Remove from heat, cool slightly, and add eggs one at a time, mixing until smooth and blended. Stir in 1/2 of cheese to batter. Grease cookie sheet and with large spoon make 7 equal mounds arranged in a circle, touching slightly. Top with remaining cheese. Bake for 45-55 minutes, till puffed and golden brown. Serve immediately with butter.
