Forget-Me-Nots 2 egg whites 3/4C sugar 1t vanilla 60z chocolate chips (1/2 pkg) Turn oven to 375 degees and lightly grease cookie sheets (or line with wax paper). Beat egg whites until stiff. Add sugar and beat until very stiff peaks form. Add vanilla and fold in chocolate chips. Drop by spoonfuls onto cookie sheets. Place in oven, turn oven OFF, and leave overnight. ![]() Ranger Cookies 1C butter, softened 1C sugar 1C packed brown sugar 2t vanilla 2 eggs 2C flour 1t baking soda 1/2t baking powder 1/2t salt 2C Rice Krispies or corn flakes 2C quick or old fashioned oats 1 1/4C coconut 1C chocolate chips (optional) Beat butter and sugars until light. Beat in vanilla and eggs, 1 at a time. Add combined flour, baking soda, baking powder, and salt; mix well. Stir in cereal, oats, coconut, and chocolate chips (if desired). Drop by rounded tablespoonfuls onto greased cookie sheets; flatten into 2-inch circles. Bake at 350 degrees for 10-12 minutes or until light golden brown. ![]() Poor Man's Pie 1C sugar pinch of salt 1T cinnamon 2T flour (heaping) 2C water 1t vanilla butter piecrust Mix dry ingredients together in a bowl. Add water and vanilla. Pour into uncooked piecrust; dot with butter. Bake at 425 degrees for 10 minutes. Lower temperature to 350 degrees and cook for 30 minutes or until set. Will set up more while cooling (allow to cool overnight for best results) ![]() |
