Soup Recipes


Meatball Soup

Meatballs
1 egg
1 lb ground beef
3/4C bread crumbs
1T honey mustard OR 1t brown sugar and 1t mustard
1/2t onion powder
1/2t paprika


Soup
2 cans (14 1/2 oz each) beef broth
1 can diced tomatoes
1/4t celery flakes
1/4t basil
1/4t thyme
1/4t salt
1 pkg frozen mixed veggies (I use peas, carrots, and corn)

Preheat oven to 400 degrees. Beat egg and add ground beef and remaining meatball ingredients. Shape into walnut-sized meatballs. Bake for 20-25 minutes and drain. (I like to use a broiler pan...it helps drain off the fat)

Mix all soup ingredients except for frozen veggies. Bring to a boil and simmer for 15 minutes. Add veggies and meatballs to soup. Simmer another 15-20 minutes.
