                           Basic Shrimp Filling

   1      pound         shrimp
     3/4  teaspoon      salt
     1/2  teaspoon      sugar
     1/4  cup           bamboo shoots, canned, into 1/8" dice
   2                    scallion, finely sliced
   1      egg white     beaten
   2      teaspoons     oyster sauce
   1      teaspoon      sesame oil
   1      teaspoon      sherry
          pinch         white pepper

Shell, devein, wash, dry and quarter the shrimp. I have better luck by mincing or processing in food processor (holds shape better).

Place shrimp and all other ingredients in a large mixing bowl and mix, in one direction, with a wooden spoon or 2 pairs of chopsticks, for about 5 mmins until well blended.

Place mixture in a shallow dish and refrigerate for at least 4 hours or overnight When thoroughly chilled, use in the recipes that call for it.
