Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
   2 c Sugar
     2/3 c Half-and-half
     1/4 c Light corn syrup
   1 (1-ounce) square unsweetened
     1/4 c Butter or margarine
   2 ts Vanilla extract

Combine sugar, half-and-half, corn syrup, and
unsweetened chocolate square in a Dutch oven; cook
over low heat, stirring gently, until sugar dissolves.
Cover chocolate mixture and cook over medium heat 2 to
3 minutes to wash down sugar crystals from sides of

  degrees), stirring occasionally.Remove chocolate
mixture from heat. Add butter and vanilla. (Do not
stir.) Cool to lukewarm (110 degrees); beat with a
wooden spoon until mixture thickens and begins to lose
its gloss. Pour mixture into a buttered 8-inch square
pan, spreading with a spatula. Cool and cut into
  squares. Yield: about 1-1/4 pounds.

Double Good Fudge: Prepare Famous Fudge as directed
above, but pour mixture into a buttered 9-inch square
pan. Prepare Peanut Butter Fudge and pour over
  chocolate layer. Yield: 3 pounds
