                               Scallion Oil

   3      bunches       scallions
   3      cups          peanut oil

Wash and dry the scallions. Cut the ends off, and cut each scallion into 4 pieces.

Heat wok over medium heat. Add oil, then add scallions. When scallions turn brown, the oil is done. Strain oil through a fine strainer into a bowl and allow to cool to room temp. (discard scallions or use them in a recipe)

Pour the scallion oil into a glass jar and refrigerate unil sealed.
