Patti's Giardinera
3 ribs celery, cut into 1" pieces
1 head cauliflower, into floweretes
1 yellow bell pepper (or red), sliced
3c baby carrots
1 bag boiling onions
1 hot pepper (I used a jalapeno), no seeds, sliced
1 1/2T celery seed
1T mustard seed
1t tumeric
1c pickling salt
1 qt vinegar
2c sugar
ice, water
Dissolve salt in ice water. Add the vegetables and leave overnight. Drain the veggies and rinse in cold water and allow to drain again.
In a large stainless steel pan, combine vinegar, mustard seed, celery seed, chilies, and sugar. Boil for 3 minutes and add veggies, and reboil for 3 minutes.
Add veggies to sterilized jars, and top with vinegar to 1/2" of rim. Close lids firmly and process for 10 minutes.
