Vidalia Onion Chop-Chop

3 1/2c vidalia onions, coarsley chopped
1 1/2c red bell peppers, coarsley chopped
1/4c green peppers, coarsley, chopped
1c sugar
1 1/2t salt
1c white vinegar

Combine onion, green and red/yellow peppers; cover with hot water. Let stand 5 minutes. Drain well; add sugar, salt and vinegar. Mix well; simmer 25 minutes (DO NOT BOIL). Pack in hot, sterilized jars; seal at once. Process 10 minutes.
