3 cans minced clams (undrained)
juice of one lemon
1 teaspoon oregano
1 teaspoon parsley
4 cloves garlic, minced
2 tablespoons olive oil
1 bell pepper, finely chopped
1 onion, finely chopped
few dashes Tabasco sauce
pinch cayenne pepper
1 cup seasoned bread crumbs
1/2 teaspoon basil
grated parmesan or romano cheese
cheese: Velveeta, brick, cheddar, etc -- sliced or grated
Heat oven to 350. Butter/oil an 8x8 baking dish, set aside.
In small saucepan, simmer the clams (with the juice) with the lemon juice. Meanwhile, saute the onions and pepper in the olive oil in another pan. Add the parsley, oregano, Tabasco, red pepper, and the basil to the vegetables. Mix thoroughly. Add the clams and lemon juice mixture to this. Then add the breadcrums. If it is too moist, add a bit more breadcrumbs. Mix well.
Pour the mixture into the baking dish. Top with the grated cheese, and then the slices of cheese to cover. Sprinkle paprika over the top. Bake, uncovered, in a 350 oven until the cheese melts and dip is bubbly. Let sit before serving, and serve with crackers. WARNING: this dish is addictive!
