BOW KNOT DINNER ROLLS

6 cups Flour
1/2 cup Sugar
1/2 teaspoon Salt
2 packages Yeast
1 1/3 cups Water -- very warm
10 tablespoons Butter -- softened
3 Eggs -- at room temperature
Poppy Seeds
In a large bowl, mix 1 1/2 cup flour, sugar, salt, and dry
yeast. Add water and butter to dry ingredients. Beat 2
minutes. Add 2 eggs and 1 cup flour. Beat 2 minutes. Stir
in enough flour to make a stiff dough. Knead for 8 to 10
minutes. Grease dough, place in a greased bowl and cover.
Refrigerate for at least 2 hours (up to 24 hours). Punch
down.
Divide dough into 48 equal pieces. Roll each into an 8 inch
rope. Loosely tie ropes into knots, leaving a loose loop in
center. Place on a greased baking sheet.
Brush with melted butter, cover and let rise until
doubled--about 1 hour. Beat remaining egg and brush on
rolls. Sprinkle with poppy seeds. Bake at 400 degrees for 8
to 10 minutes.
