6 medium-size onions, sliced
tablespoons butter or margarine
6 1/2 cups rich beef broth
1/2 teaspoons salt
Melba toast rounds or French bread, sliced and toasted
Grated Parmesan or Mozzarella cheese
Sauté onions in butter or margarine in large saucepan until lightly brown.
Add beef broth; cover; cook about 15 to 20 minutes
or until onions are tender.
Add salt.
To serve, bring soup to boiling; ladle into soup cups or bowls.
Top each bowl with melba toast or French bread toast slice,
topped with Parmesan or Mozzarella cheese.
Place under broiler until cheese is melted and slightly brown.
