These are some of my favorite recipes. They must be good as my husband's waist size has expanded a bit since we first got married in 1992. Most of these recipes are quick & easy (that's the only kind of cooking most of us have time to do).

I love to experiment with recipes so feel free to add or delete whatever ingredients you want.

APPETIZERS:

Bruschetta

Bread (sliced French or Baquette, or whatever you like)
2 tbsps chopped garlic
2-3 tbsps Olive Oil
1-2 tomatoes (chopped small)
mozzarella cheese
salt, pepper & oregano to taste

Combine garlic, oil, tomatoe and spices. Let sit while you slice the bread and place it on a cookie sheet. Lightly brown the bread. Grate enough mozzarella to cover the bread slices. Cover each slice with mozzarella and spoon on tomatoe mixture. Heat under the broiler.

SAUCES, DIPS & DRESSINGS:

Dad's Famous Spagetti Sauce

(....at least, it's famous in our family. Dad's been cooking this recipe for as long as I can remember. It's something a little different from the usual spicy spagetti sauce....it's sweet & yummy. I've made a few additions over the years. It's also a great Sloppy Joe Sauce, if you cut down on the liquids a little.)

1-1 1/2 lbs ground beef
1 onion, chopped
1 tsp salt
1/4 tsp pepper
1/2 tsp each of oregano, basil & parsley
1/4 tsp dry mustard
1 tbsp each of brown sugar, vinegar & lemon juice
1 cup ketchup
3/4 cup water
sliced mushrooms, celery & green pepper

Brown ground beef in large frypan. Add vegtables, salt & pepper and cook until vegtables are tender. In a bowl, combine remaining ingrients. Pour into ground beef mixture. Cover & simmer for 15-20 minutes. Pour over spagetti or your favorite pasta.

Parmessan Cheese Sauce

1/4 cup butter or margarine
1/4 cup all-purpose flour
1 1/2 cups half & half cream
1 1/2 cups water
2 chicken bouillon cubes (or 2 tsps chicken soup powder)
1/2 cup parmessan cheese

Melt butter in 2 quart saucepan over medium heat. Stir in flour til well blended. Gradually stir in half & half cream, water & chicken bouillon cubes. Cook over low heat, stirring constantly until sauce thickens. Stir in parmessan cheese and heat til melted. Pour over your favorite fish or pasta.

PASTA RECIPES:

Stuffed Pasta Shells
You can either stuff large pasta shells or mix all together using small pasta shells or whatever pasta you prefer.

1 lb ground beef
1 box of large pasta shell
1 green pepper (chopped small)
1 onion (finely chopped)
handful of mushrooms, sliced
mozzarella cheese (grated or in cubes)
1 large can of your favorite pasta sauce
Parmessan Cheese Sauce (see Sauces, Dips & Dressings)

Cook pasta in boiling, salted water until almost done (don't let pasta get too soft as it will cook more in the oven). Brown ground beef. Add green pepper, onion & mushrooms. Stir in mozzarella cheese then pasta sauce. (Add extra spices to your liking, eg. oregano, basil, etc.) Stir in almost-cooked pasta. Spoon entire mixture into large casserole dish. Pour Parmessan Cheese Sauce over whole thing. Cook @ 350F for 20-30 minutes.

Easy Parmessan Pasta
An easy but delicious recipe that is perfect for those days when your running late and the family's hungry....NOW!!!

1 lb ground beef or chicken
3 cups cooked rotini (1 1/2 uncooked)
1 large jar (750ml) pasta sauce
1/2 cup Parmessan cheese

Brown ground beef in large pot. Stir in remaining ingredients and top with more parmessan. (Tip: Add onion, mushrooms, celery, green pepper, or whatever to ground beef & cook til tender, then add pasta, etc. to make a more filling meal that will feed more.)

Heavenly Hashbrowns
This sidedish is delicious but remember to allow time to cook it as it takes 1 hour.

1 pack frozen Hashbrowns
1 onion, finely chopped
1 can cream of Mushroom or Chicken soup
1/2 to 1 full tub of sour cream
1-1 1/2 cups cheddar cheese
salt & pepper to taste
corn flakes or rice crispies for topping

Combine all ingredients (except topping) in a bowl. Pour into a large casserole dish. Completely cover top with either rice crispies or corn flakes. Cook @ 350F for 1 hour.
