Chocolate Mousse

This mousse is realativly easy to make and it's absoloutly delicious! The recipe uses milk chocolate instead of dark chocolate, and this gives it a wonderful flavour.

Ingredients

4 eggs, separated
600ml cream
375g milk chocolate
1 tspn vanilla essence

Beat the egg whites until stiff.
Beat the cream in another bowl until slightly thickened. Do not overbeat.
Melt the chocolate. Add the essence with the egg yolks.
Add the egg whites and cream together. Add chocolate, then the yolks and essence. Beat together until smooth. Be careful not to overbeat.
Refrigerate for a couple of hours before serving.
