Pavlova

For all you people living outside of Australia, pavlova is a popular dessert for parties etc. Made like a giant meringue smoothered with sweetened whipped cream, it really is worth a try.

Ingredients:
4 egg whites
1 cup castor sugar
pinch of tarter and salt
1 tablespoon cornflour
1 tablespoon white vinegar
Ingredients for cream mixture:
1 tub thickened cream
a few drops vanilla essence
1 tablespoon castor sugar (optional)

Beat egg whites, tarter and salt until stiff. Add sugar and beat until dissolved. Add vinegar and cornflour and beat for another minute. Place on grease proof paper on tray, and bake in a VERY slow oven for 1 1/2 hours. To make cream mixture, simply beat all ingredients together for a couple of minutes. DO NOT beat too much, or you will make butter. When cool, spread with cream mixture and decorate with sliced strawberries and kiwi fruit.
