Beach Cake

This is a beach cake that was made for my 14th birthday

This cake is lots of fun and it's easy to make.

Ingredients:
1 x 340 gram packet golden buttercake cake mix
2 eggs, lightly beaten
2/3 cup water
3 tablespoons butter, softened
2 x 85 gram packets blue (blueberry, blue heaven flavoured, it doesn't matter, as long as it's blue) jelly crystals
2 x 85 gram lime jelly crystals
1/3 cup cocnut
rocky road
Caramello Koalas
mini Freddos
hundreds and thousands
coloured sprinkles
assorted sweets
cocktail umbrellas
ice-cream wafers
liquorice strap
icing to hold it all together.

Lightly grease a 20 x 30cm lamington tin; line base with paper; then grease. Make cake according to directions on packet using eggs, water and butter. Spread into prepared pan. Cook in a preheated 180 degree Celsius oven for about 25 minutes, or until cooked when tested. Cool cake on a wire rack. If desired, cut cake into a sort-of island shape and place cut cake on one end to make mountains
Make jelly according to directiions on packet, refrigerate until set.
Pour cocnut into a plastic bag; add a few drops of yellow food colouring; seal bag and shake until cocnut is coloured. Tint icing with yellow food colouring, save 1/2 cup for decoration. Spread icing over cake, and top with coconut. Place rocky road around one short end of the cake; surround with chopped, mixed jellies. Decorate koalas and Freddos using reservered icing, hundreds and thousands, sprinkles, and assorted sweets. Push cocktail umbrelas into cake. Decorate using the things listed in ingredients.
Some Uses For Decorations:
Place icing on Freddos, and koalas where swimsuits would go, and cover with hundreds and thhousands or sprinkles.
Use wafers as beach towels, and lie koalas and Freddos on wafers, placing umbrellas next to them.
Use sweets as surf boards and place Freddos on them on jelly.
Use stick, string and toy fish as a fishing rod.

Have fun decorating this cake, practice (and imagination) makes perfect!
