2 c butter or margarine 2 c sifted icing sugar 2 tsp vanilla 2 eggs 5 c flour 1 tsp salt 1/2 tsp. baking soda raspberry jam or any jam Cream butter and sugar until fluffy, beat in vanilla and eggs. Combine dry ingredients and blend into other ingredients. Press into large ball and roll out into 1/4" thickness. You cut 1/2 of the cookies centres out with a thimble or a small circled item...I use one of the kids lypsol lids. When cookies are cooked-the cookies without the hole in the centre of them,are placed on the bottom. Spread jam onto them,then place the cookies with the hole in the centre of them on top to make a "mini cookie sandwich." ***These cookies are a favorite with our children and their friends. This recipe makes a lot of cookies but they disappear fast! |
