Turkey Cornbread Casserole

      This is a wonderful dish for busy families. I got it from a freezing cookbook. Because it is relatively simple, I make and freeze several at a time. Then I can just pull it out of the freezer when I get home from work. Also, all of the ingredients are popular kid favorite foods!

      Ingredients
      1 1/2 c. water
      2 T butter or margarine
      3 c. seasoned cornbread stuffing mix
      2 c. cubed cooked turkey or chicken
      2 c. whole kernal corn
      1 1/2c. shredded Cheddar or Swiss cheese

      To Prepare:
      Heat water and butter in large saucepan until boiling; stir in stuffing mix and remove from heat. Let stand 5 minutes; fluff with a fork. Stir in turkey and corn; spoon mixture into greased 11 X 7-inch aluminum foil-lined baking dish. Sprinkle with cheese. Freeze; remove from casserole and place in freezer bag.

      To Cook and Serve:
      Place casserole in 11 x 7-inch baking dish, removing foil, if desired. Bake in preheated 350 degree oven until casserole is hot and cheese is melted, 35-45 minutes.
